1 cup of plain flour
1 cup of desicated coconut
2/3 cup (packed) of brown sugar
1 cup of rolled oats (I use porridge oats)
1 tablespoon golden syrup
1/2 teaspoon of bicarbonate of soda
2 tablespoons of boiling water
Preheat oven to 160 degrees centigrade
Place flour, coconut, sugar, and oats in a bowl and mix well.
Place butter and golden syrup in a pan over a medium heat and melt.
Place bicarb in a small bowl and add boiling water, stir to combine.
Add bicarb mixture to pan and stir.
Por over oat mixture and stir together.
Roll teaspoons of mixture into balls and place on a greased and lined baking tray, leaving room for spreading. Flatten balls slightly.
Bake for 15-20mins or until biscuits are golden brown at the edges.
Allow to cool slightly before transferring to a wire rack.
